The climate and the weather patterns have high influence on the difference between a sub-par and high class bottle of bubbly champagne even when the ranging of soil type and bottling practices, the climate has a huge influence.
Precipitation: Grapes are pick before it becomes fully ripe. It contains the tart and sweet flavor. It plays an important role because if the crops experience heavy rain fall then the berries will grow faster and the flavor will become bland, and if the crops experience little rain, it will create too little of sugar due to the slow photosynthesis and can delay ripening.
Temperature: Grapes grow in fairly mild climates. When it's hot, it ripen prematurely and it prevents them for having full flavor and results in sour taste.
Cloud Cover: This can slow photosynthesis because it takes the excess heat away and it limits sugar production, and the fruit becomes tart.
As the climate patterns start to become more erratic, the vegetation zones begin to shift northward. This result in having other regions in the country to be able to produce delicate grapes destined for bubbly.
